For a long time I had been contemplating the idea of publishing a book about our culinary culture, encompassing the traditions relating to food and drink, kitchen equipment and tableware, and the most characteristic recipes of the Turkish kitchen. My wish was to preserve a record of this heritage for future generations. Only recently, however, did time permit this project to take shape at last.
